What is CASSIA?

Cassia, also called Chinese cinnamon, spice consisting of the aromatic bark of the Cinnamomum cassia plant of the family Lauraceae. Similar to true cinnamon, cassia bark has a more pungent, less delicate flavour and is thicker than cinnamon bark.

Cassia Seeds / Gum Powder

Cassia seeds come from the cassia, an annual plant that grows in the world's tropical zones. It is an upright-growing plant that can reach a height of more than four feet, with large, green leaves and yellow flowers. The entire plant is picked and reaped in autumn, then dried in the sun. The seeds threshed off the plant, and can be used either raw or after being fried.

Externally, cassia seeds range in color from greenish-brown to dark brown, with a smooth surface. Some cassia seeds may have small yellowish bands on the outer surface.

Cassia Gum Powder is the flour of the endosperm of Cassia Tora and Cassia Obtusifolia. This sub-tropical bean plant grows in forests and the country side. It is not cultivated. It belongs to the family of Leguminosae whose energy reservoir consists of a polysaccharide compound of galactose and mannose units. Production of this ingredient is an agro based and environment friendly operation.

CASSIA GUM E427

Cassia based gels show inhibited syneresis and reduced dryness. The water binding function of Cassia Gum (E427) provides a thicker and richer ‘mouth feel’. It can be used to replace fat in low fat processed foods e.g. low fat yogurt, low calorie dressings, low fat meat foods. Cassia Gum (E427) in synergy with other gums and material in the right proportions can hold emulsions together. Cassia Gum (E427) in synergy with Xanthan (E415) forms cohesive and elastic gels. This soft gel synergy can be used in formulations such as cream cheese.

Refined Cassia Gum Powder is very useful in the other applications for example emulsification, foam stabilization, moisture retention and texture improvement at concentrations comparable to those of other edible natural gums. Some typical applications are Ice-cream, Cheese, Sauces, yogurts, etc.

Uses

Cassia Gum Powder has got excellent thickening, gelling, and binding properties which makes it useful as a valuable additive in several applications. The prime applications of Cassia Gum Powder lie in food industry.

Cassia Gum Powder is widely preferred for use in frozen food preparations like ice-creams, soft serves, frozen cakes, etc. It prevents ice crystals formations and act like a moisture loss controller, stabilizer, freezer burn reducer, syneresis controller, freezing point and thaw separation controller.

Use of cassia gum powder in food products like snacks, puddings, noodles, pasta and meat products will promote moisture retention and hence improve texture or shape of the food.

Dairy products like cheese, yogurts, desserts, mousse, whey protein concentrate, etc. are prepared with cassia gum powder as one of their ingredients. This helps to improve texture in food products, prevents syneresis in cheese formation improves tenderness and mouth feel, moisture distribution control, increase and viscosity.

Use of cassia gum powder will increase viscosity and also improves free flowing properties of the food product. It is unique water dispersible, acid resistance and free water binder in salad dressings, sauce, pickles and relishes.

Cassia Gum Powder is a good gelling agent and can retain moisture to a great extent. It is a good thickener, stabilizing and suspending agent for veterinary preparations and use in wet canned pet food, vertinary preparations and calf milk replacement solutions.

Cassia Gum Powder is an excellent stabilizer and dispersant. It is used in floating agent, flocculation or setting agent, foam stabilizer, back water generator and water proofing agent in several food applications.
